Traditional Balsamic Vinegar is obtained through the acetification, maturation and ageing of cooked grape must stored in sets of progressively smaller barrels made from different woods.

- Traditional Balsamic Vinegar of Modena P.D.O. - refined, 12 years old
This Traditional Balsamic Vinegar P.D.O. is aged in small high-quality wood barrels for at least 12 years and develops an intense aroma. Not particularly sweet, it is ideal on raw meat and fish dishes. Also great on risotto and eggs and for preparing vegetable-based sauces.

This Traditional Balsamic Vinegar P.D.O. is aged in small high-quality wood barrels for no less than 25 years. Its full, mature balsamic flavour makes it a perfect complement for aged cheese, meat fillet, dried figs, ice cream and strawberries.
